Zucchini Chips

Serves: 1
  • 1 medium zucchini
  • juice from ½ lime
  • dash of sea salt
  • dash of pepper
  • dash of balsamic vinegar
  1. Slice zucchini on mandolin. Place parchment paper on baking sheet and preheat oven to 225 F degrees.
  2. Toss zucchini in bowl with salt, lime, pepper and balsamic vinegar.
  3. Place in a single layer on baking sheet and bake in oven for 45 minutes.
  4. Rotate baking sheet for even distribution and bake for another 20 minutes until chips start to brown and crisp.
